    Variety

    The Small Chickpeas from Lucchesia are a unique variety of chickpeas that grow into bushes reaching a height of about 50-60 cm (19.68-23.62 inches). These chickpeas are characterized by their small, smooth seeds with an incredibly intense flavor and a soft, delicate texture.

    Territory

    These small chickpeas are cultivated in the flatlands of Lucca and the surrounding areas of the province of Pisa. The soil in this region is loose, with abundant mineral particles exceeding 0.07 inches in diameter, and it is enriched by the presence of numerous waterways.

    Cultivation

    The chickpeas, carefully selected and preserved by dedicated farmers, are sown between March and May.

    The soil is worked at the surface to prevent weed growth, and any necessary weed removal is done mechanically.

    Fields are nourished solely with organic manure or other approved organic fertilizers.

    Irrigation is managed responsibly, and only organic-approved products are used to control plant diseases and pests.

    Collecting and Storing

    In the warm month of July, the pods are meticulously collected and then shelled. Following this, all impurities are removed, and the chickpeas undergo a "cold treatment" to safeguard them from insects. They are placed in a cold storage facility at a freezing temperature of approximately -20°C (-4°F) for about two weeks.

    Directions for Use

    Store these chickpeas in a dry location to maintain their quality and flavor.

    Before use, it is advisable to visually inspect them to eliminate any remaining impurities. Prior to cooking, soak them in cold water for a minimum of 12 hours.

    Cooking time typically takes around 40 minutes.

    These chickpeas are particularly well-suited for soups, creamy dishes, legume and grain soups, as well as creative salads.
