    Black Beans

    Variety

    Black Beans are a non-climbing bean variety characterized by plants that grow to a height between 50 and 60 cm. Its seeds are small, dark, shiny, and tubular in shape. In taste, these beans stand out with an intense, slightly sweet flavor and a soft yet compact texture. They are also rich in antioxidants.

    Territory

    Our Black Beans are cultivated in the municipality of Sorano, in the province of Grosseto. The soils in this area are of medium texture and rich in potassium.

    Cultivation

    The beans are selected and sown by our growers between March and April. The soil is worked superficially to limit the growth of weeds, which are removed through exclusively mechanical operations when necessary. Fields are cultivated using crop rotation, and they are only fertilized with manure or other organic fertilizers when needed. Irrigation is practiced only when necessary. For disease and pest control, we use only products approved for organic farming, avoiding the use of synthetic chemicals.

    Collecting and storing

    In August, Black Bean pods are manually harvested, preferably in the early morning to prevent seed dispersion due to the fragility of the pods. Subsequently, we proceed with manual shelling, sun-drying of the seeds, and removal of impurities. To protect them from insects, the legumes undergo a cold treatment, freezing the seeds in a cell at -20°C for several days.

    Directions for use

    We recommend storing Black Beans in a dry place.

    Before cooking, it's advisable to visually inspect them to remove any impurities.

    To cook Black Beans, after soaking them overnight, place the beans in a pot with cold water, covering them with about two fingers of water.

    Bring to a boil and simmer, adding salt toward the end of cooking.

    The total cooking time will vary based on the soaking duration but will be at least 60 minutes.
