    Red Lentils from Sorano

    Variety

    Red Lentils are an exceptional variety of lentils, with plants that grow in a semi-prostrate manner, forming bushes ranging from 30 to 40 cm in height. The decorticated seeds are small and have the characteristic orange color. In terms of taste, red lentils stand out for their soft texture and intense flavor, with sweet and savory notes.

    These legumes are also rich in protein, complex carbohydrates, iron, other minerals, and B-group vitamins.

    Territory

    Our red lentils are cultivated in the picturesque town of Sorano, located in the province of Grosseto. The soils are of medium texture and rich in potassium, creating an ideal environment for the cultivation of these lentils.

    Cultivation

    The lentils, carefully selected and preserved by our farmers, are sown between November and December. The soil is worked superficially to control the growth of weeds, and when necessary, they are removed through exclusively mechanical operations. Since lentils are cultivated using crop rotation, there is no need for fertilizers or irrigation. For disease and pest control, we do not use synthetic chemicals but only products authorized for organic farming.

    Harvest and Preservation

    In June, lentils are harvested manually. Subsequently, they are hulled, cleaned of impurities, and subjected to cold treatment to protect them from insects.

    This treatment involves storing the legumes in a deep freeze at -20°C for several days.

    Directions for use

    We recommend storing lentils in a dry place.

    Prior to cooking, a visual inspection to remove any residual impurities is advisable.

    These lentils do not require soaking, and the necessary cooking time is about 10 minutes from the start of boiling.

    If cooked longer, they will tend to break apart, making them an excellent ingredient for velvety soups and creams.
